Tasting Notes

Quite the mouthful of ingredients makes for a rather lovely mouthfeel!  But let's start with how it looks; a bright clear orangey-red, lighter at the rim.  Smells fruitily alcoholic with mouth wateringly savoury herbal notes, prunes and dark chocolate comes through too.

Taste;  Deliciously jammy with rosemary letting us all know she's part of the line up too.  Nice touch of acidity and goes down very smoothly.  No taste of pumpkin!

Makes for a perfect dessert wine, either served by itself or with after dinner cheeses or chocolate.

Can also be warmed up for an instant mulled wine, adding extra whole spices and orange wheel entirely optional~

Wine Making Notes

Red plums macerated with sugar for two days, blueberries squeezed in a press; the juice went to the plums, the skins went with the pumpkin that was boiled for 30mins.  This was strained and poured over the fruits, along with a "tea" made from fresh rosemary.  All produce grown organically.  Left for a week for a furious ferment then racked into a glass fermenter.  Seven months fermentation then it was blended with a plum jam wine and French brandy.  Bottle aged for 13 months, released perfectly in time for Christmas 2023 and beyond!

Because this is a fortified wine it comes with a screw cap and the flavour will not deteriorate over time, just like a port.
