Apple, Elderflower + Vanilla, Fortified Wine

Tasting Notes

Deep golden and clear in colour with good strong legs.  The smell of this liqueur type wine is like smelling a big sweet heirloom apple that's been freshly sliced on a hot summers day with someone drinking a vanilla milkshake beside you!

Tastes rich, sweet and lush; vanilla buttery creaminess with fruity apple and a subtle touch of bitter from the elderflowers.  Feels like a hug in a glass.

Winemaking Notes

This brew started it's life in March 2023, made from a mixture of organic heirloom apples, the bulk of which being Belle de Boskoop.  The elderflowers had been collected and dried in December (2022), especially for this wine.

Made into a purposefully sweet wine, it was then bulk aged for five months then blended with St Remy VSOP brandy that I had prepared six months earlier (by popping whole vanilla pods in the bottles to infuse).  Once blended and bottles it was aged for 12 months before release, November 2024.

Being a fortified wine, this will keep indefinitely and is made to be enjoyed as you would a port.
