Crab Apple + Pumpkin Wine
Tasting Notes
A beautiful peachy colour with fine beaded bubbles, smells of fresh green leaves and apples. This is a very dry sparkling wine, giving off Brut rosé methode champagne vibes, there's a savoury undertone that almost coats the tongue in minerality. Take mind, being 14.5% abv and fizzy, it will reach the head quickly!
Winemaking Notes
So how did I get that colour you ask? The crab apples were sourced from a local garden here in Eketāhuna and were red skinned AND red fleshed! Stunning! The pumpkin was a big jolly fulla, sourced from a friends tiny home garden just out of Woodville. The apples were smashed, the pumpkin was boiled and there was a wee sneaky addition of star anise. It was all put together and had a quick autumn ferment; too quick in fact. So I had to backsweeten it, which I chose to do with the last of my honey (I don't have beehives anymore) and for a reason that felt right at the time, some dried thyme. I left it for two months, it appeared done so I bottled it in July (2024). Turns out it wasn't done, and undertook a second fermentation in the bottle, and there a sparkling wine was born!
I released this the 1st December 2024 (yesterday) at the Woodville market and I now only have seven bottles left. How exclusive is that?!
