A beautiful orangey pink in the glass, bringing Spring to your nostrils it smells like a bouquet of flowers (the bouquet smells like a bouquet!) with grapefruit peel and glacè cherry lingering.
This is a walk in the garden, by rights you should be sipping on this whilst wandering the Hamilton Gardens, little finger out, watching for fairies
It obviously is a floral little number, with a slight hint of acidity and a mile long finish. Very medium, leaning to dry if it had to. I think if you're a fan of Earl Grey (or Lady Jane) tea, you will quite like this. I'm drinking it at room temperature; I haven't tried it yet but I imagine that this would really sing with a cheese board, especially blue cheese.

Winemaking Notes
Early summer 2024 I started collecting rose-buds from our rambling rose and drying them, then in January the kids and I spent a morning in the neighbours paddock (unsprayed, home for one cow) collecting red clover flowers (which are actually more mauve than red). And from the garden I collected a mix of white and purple Spanish lavender and standard English lavender (Grosso).
Made a big ol' tea with the flowers, then, utilising an old fruit wine makers trick I made a banana gravy to give the wine body. Banana gravy entails slicing up bananas and boiling them with a bit of water to create a slurry, well, gravy, of sorts. It's for feel rather than flavour.
Had completed it's fermentation in February 2025, bottled in August and released the following year, August 2026.
