Hāwera Plums, Raspberry and Sour Cherry Wine
Tasting Notes
A bright cherry red wine, clear with fine looking legs. Smells like raspberry Foxton Fizz!
From the look and smell of this wine, at first sip it's almost a shock to the palate that you're not drinking a sickly sweet artificial raspberry drink (just to assure you this was made from all very real fruit!). So the first hit is the plummy acidity, mellowed by the very slight sweetness. It sits nearer to the rosé end of the spectrum than the red wine end; it's bright, light and fruity and would be perfect served with a pre-dinner cheese board.
Winemaking Notes
41 litre batch
The Hāwera plums were sourced from artist Lindy McLachlan's (and partner Donald) property up the road and round the corner. The plums were cut in half and macerated in sugar for two days, raspberries were added and left for another day. Swilled with filtered spring water the yeast was then pitched and left to do its thing for a few months.
Sour cherry wine was made much the same way as above, but it finished a lot sweeter than what I like... which made it the perfect wine to blend with the plum and raspberry wine which finished a little on the tart side!
