Pear, Lime and Hops Wine
Tasting Notes
Pale, slightly cloudy sparkling wine with fine beads. Smells like fresh grass and orange peel, and the taste, oh, dry lovers unite! Unripe pears, lemon rind with a hint of hoppy bitter at the back. Magic!
Winemaking Notes
Made in March 2024 from green pears sourced from artist Lindy McLachlan's rambling orchard, hops from my own rambling garden, limes and a wee knob of ginger from the, ahem, New World...
The pears were hand chopped then soaked in sugar water that had had the hops added near the end of the boil, and sliced ginger. They all hung out for six days with some juicy limes, until it was all strained off and the yeast was pitched.
A few months of fermentation and I was surprised to discover that despite being fermented out to a dry 13% abv, that it tasted like a Champagne! Not wanting to lose that, I added a touch of sugar to the bottles before bottling to ensure I would capture more sparkle with a light secondary fermentation.
