Lemon + Lime Wine
Tasting Notes
Very pale golden colour with good legs, smells like grass, lemon rind and lime juice. The taste will take you back to a good old fashioned lemonade, but ahem, alcoholic, a bit more zingy and not quite as sweet!
I'm enjoying it at room temperature, but when the weather warms up it will be even more refreshing chilled.
Winemaking Notes
This is not just a blend of two (organically grown) citrus fruits but a blend of three regions; the lemons came from Wairarapa (thank you Janine), the limes from Manawatū (thank you Deanna) and the wine was created in Tararua (ahh, thanks me!), how's that for neighbourly relations!
All the limes were hand sliced with their skins on, whereas most of the lemons were zested then peeled and sliced. I pitched a mead yeast to ferment this wine so as to soften the acidity. Was a slow ferment, starting in early September 2024 and not deciding to be done until May 2025. Bottled in August, released November 2025.
