Sparkling Elderflower Wine

Tasting Notes

Clear pale cream, with subtle bubbles (which will get more vigorous with time in the unopened bottle), a heady floral nose.  This is one sweet number that goes down much too quickly for our own good, but at 6.5% abv, it's all a OK!

Winemaking Notes

To be in time for  Christmas and the summer months, this batch of sparkling elder was made from dried elderflowers that were harvested from the property in late 2023.  Started in May 2024, it had a long winter ferment and finished at a sweet 6.5% by November.  It's now undergoing a second ferment in the bottle which will create the bubbles we're after.  Released Dec 2024.
