Sparkling Persimmon + Orange Wine

Tasting Notes

A peachy orange colour with stunning clarity, that you can see once the fine bubbles have settled down.  Smells like organic dried apricots.

This is a very dry sparkling wine with an almost woodsy flavour with orange pith at the back.  With the dance of dry, bitter and bubbles in the mouth it will wake everything up within you.. just remember to drink it slow!

Winemaking Notes

In June 2025, my friend gave me persimmons from her organic orchard in Motueka.  Excited by their beautiful colour I decided to ferment them with pure NZ orange juice plus some cinnamon sticks and rainbow peppercorns.

For a winter ferment it was pretty quick and was done by November, but to be honest it was a little meh so I added a wee squizz of some strawberry guava wine I had going on and left it for another three months then bottled it in January 2026.
