Unripe Golden Plums + Pineapple Wine

Tasting Notes
The colour of dried grass on a hot summers day, this wine smells of fresh pineapple including the green spikey leaves.
This is one refreshing number, pineapple is dominant with a subtle sweetness, an interesting wee quirk of bitterness at the end and a mouthwatering acidity that has you coming back for more. It's got real zing power and will go beautifully with creamy fish/chicken/pasta dishes.
Winemaking Notes
(and story of the name)
If you are familiar with Ume Pineapple 2023 and/or the saga of our golden plum tree, you may already know that our old girl (our over 80 year old golden plum tree) has been slowly but surely shedding her major branches. December 2024 the mother load of branches fell down before the plums were ripe, these were harvested (easy pickings!) and made into this wine. The same had happened the year before and I had named it Ume Pineapple, but that is actually a misnomer as ume are a specific breed of Japanese plum, not just unripe plums! So; The Fallen One for the fallen branches, I'll leave it to you if you want any double meanings ;-)
The plums were macerated in sugar for three days then rinsed and sieved, the juice was put in another vessel and crushed pineapple was added for another two days, then the yeast was pitched and hey ho off we go for a jolly good ferment! Half way through I thought something had gone terribly wrong as it did not smell how I wanted it too, but then time, that magic wine ingredient, worked it's spell, and it smelt and tasted good enough to bottle in June 2025. Released in September 2025.
Best enjoyed young. This will be the last of this type of wine for the forseeable future (see story above!)
