Tasting Notes

A beautiful clear golden wine with distinct plum on the nose with unripe apricots and vitamin C (just go with it alright!).

Tastes of sweet toasted plum skins with crunchy acidity and woody undertones. 

Best served with food; will match well with creamy based meals and white meats.

Will age well over the next three years.

Winemaking Notes

The plums are off our ancient golden plum (exact variety unknown) tree that has a renown legacy with the old folk that live around these here parts; we would hear about it if we ever dared to cut it down (which we would never!).

Plums were hand harvested by the family summer of 2022/2023, mashed by hand and macerated with sugar for three days, sieved and siphoned off, water was added and pH adjusted. 'Champagne' yeast was pitched and we had a furious ferment for seven days until it was racked off for a more gentle ferment for three months.  Bulk aged for a spell until the wine was bottled in April 2023.
