Golden Plum + Marigold Wine

Tasting Notes

Traffic light amber orange in colour and beautifully clear, smells like sundried apricot skins and shooting the breeze on the top of a sunny hill.

A nice mild sweetness cut through with mouthwatering acidity.  There's a bitter hint from the marigolds but a very serious plummy/stonefruit taste pulling it all through.

It's drinking nice now but I think it will only get better with age as the acidity drops out and the flavours come more to the forefront.  

I'm enjoying it at room temperature, but go ahead and chill it if you like 😉

Winemaking Notes

Golden plums freshly harvested from our grand lady early January 2025.  Blimmin slugs ate all my marigold seedlings so put a call out to my local permaculture group and received a bucket full of fresh marigold flowers (thank you Julia!).

Fermented out to the perfect 13% by April, bulk fermented for three months, bottled in July, then bottle aged for seven months and released late February 2026.
