Strawberry, Pear + Elderflower Sparkling Wine

Tasting Notes

A clear rose-gold colour with lovely little bubbles.  Has a subtle floral scent over apple, guava and grapefruit.

Tastes like strawberry chewing gum that's quickly cut with elderflower funk and zippy acidity; it's a party in your mouth that you won't want to stop.  Quite possibly a little too delicious!

Winemaking Notes

The pears came from Grandmother Pear Tree on our property, as were the elderflowers, except they were collected in early summer and carefully dried especially for this wine.  The strawberries came from Wee Red Barn, a berry institution in Wairarapa.

All was put together mid March 2026 and the yeast was pitched.. a two month autumnal ferment, then bottled in May before the ferment was totally complete to retain some sweetness and give it a sparkle.
